Pellet grill reverse sear tri tip is one of the best ways to cook this flavorful cut of beef. In this recipe, I’ll show you exactly how to reverse sear a tri tip on a pellet grill for incredible flavor every time.



When it comes to grilling, achieving that perfect balance of tender, juicy meat with a smoky, flavorful crust can be a challenge. But with the reverse sear technique on your trusty pellet grill, you can turn a simple cut like tri-tip into a culinary masterpiece. This is a reverse sear, so you cook it low and slow, then remove from the grill, crank up the temperature, then sear it. If you want an amazing cut of beef that can quickly be cooked on your pellet grill, then look no further. This was a delicious recipe that my entire family enjoyed and can't wait until I cook it again. It is juicy and delicious and packs the flavor.


What is Tri Tip?

Tri tip is essentially the triangular muscle cut from the bottom of the sirloin. Tri tip roast is sub primal cut that originated from Santa Maria, California. I can tell you it is a delicious cut of meat, and probably one of my family's favorites. This cut that was a little over three pounds at $6.99 a pound.

Prep Time - 30 Minutes

Cook Time - 2-3 hours (Usually 1 hour per pound)

Cooking Temperature - 225°



Pellet Grill Reverse Sear Tri Tip Ingredients

  • Tri tip steak

  • Olive oil

  • 1 stick of unsalted butter

  • Your favorite steak seasoning. I use Killer Hogs AP

How to prepare and season your trip tip

1. Start off by trimming the hard fat and silver skin off the back of the tri tip. Once trimmed, apply olive oil as a binder and then add your favorite rub. I added Killer Hogs AP seasoning. Killer Hogs AP is an excellent blend of salt, pepper, and garlic and that is all you need on a quality cut of meat. Let sit on your countertop while you start up your pellet grill. Turn your pellet grill up to 225°, once your grill reaches temperature, put your tri tip directly on the grates. Inset your cooking meat thermometer into the thickest cut of the beef. Smoke until your internal temperature of your tri tip reaches 119°. Pull off grill and let the tri tip rest while you crank up pellet grill temperature to 450°.

2. Put your cast iron skillet in your pellet grill and once your grill reaches 450° add a stick of unsalted butter into skillet. I highly recommend the 12" Lodge Skillet that you can get from Amazon. 3. Once your butter has melted put the tri tip into your skillet. Let it sear in butter and flipping on both sides. Pull at your desired doneness.

Resting, slicing, and serving tips

4. Let the Tri Tip rest for 10-15 minutes and remember your tri tip will still cook while resting. To rest I use and BBQ resting bag.

How to Cut Tri Tip

To cut tri tip correctly and like most cuts of beef you need to cut against the grain. Start by separating the section where the two grains intersect and cut into two pieces. Then start slicing from the small end against the grain, then grab your other cut and begin slicing against the grain. Cutting against the grain will give you a more tender cut.
